Wake up and grill


I woke up to the first day of March breaking with a splash of sun and breath of wind. Not too warm, but with a promise of spring in the air. So, what to do for breakfast? Break out the grill! Some spicy keilbasa, cheesy eggs and crispy potatoes. all with a touch of maple for sweetness, really embodied the torn feeling I get this time of year. To whip up some warm and wintery comfort food or light and fresh tastes of spring. At this point, I'm still seeking the satisfaction of heart & stomach warming food, but grilling the keilbasa is a nod to our approaching season.

Peruvian Purple Potato Oven Home Fries

Peruvian Purples don't taste any different then your typical potatoes, maybe if anything a touch sweeter. I like their surprising color & the way they crisp up when baked. One thing I cannot stand are mushy home fries.

1 cup potatoes per person, cut into small chunks - I use all new potatoes, 1 golden potato to contrast the purple potatoes
1/4 sweet onion, chopped (per person)
drizzle of olive oil

Toss potatoes and onion in olive oil. Season with salt & drizzle with oil, toss. Bake on a jelly roll pan in a 450 degree oven until crispy - about 20 minutes.

Scrambled Jarlesburg Eggs - recipe is per serving

2 eggs
splash half and half
pinch garlic powder
1/2 tsp italian seasoning
1/2 tsp ground black pepper
1 oz of very thinly sliced jarlesburg swiss

butter for the pan

Purple Peruvian Home Fries
1/4 package keilbasa, split, brushed with olive oil and grilled until charred on the exterior
dark amber real maple syrup

Beat the eggs and half and half with seasonings until well combined. Preheat a nonstick pan with enough butter to coat over medium high heat. Pour in eggs and place cheese slices on top. Do not touch until eggs start to solidify on the bottom! Scrape with a rubber spatula to redistribute uncooked egg onto the pan's surface. Cook until almost all solidified - you want them a little custardy, and residual heat will take it the rest of the way.

Arrange home fries on a plate in a flat layer. Fold eggs gently over the top of the potatoes. Top with pieces of grilled kielbasa and drizzle with maple syrup. Enjoy your fabulous breakfast!
