I woke up with Jack Johnson's Banana Pancakes in my head. So what to do? Make banana waffles (i like waffles more than pancakes anyway). These have a mild banana flavor, but the pecans really make this special.
1 ripe banana, mashed
3 beaten eggs
3 Tbsp melted butter
1 1/2 cups 1% milk
2 Tbsp sugar
1/2 tsp salt
1 tsp allspice
1 tsp ginger
1 3/4 cups all purpose flour
1 Tbsp baking powder
1/2 cup toasted chopped pecans
Preheat waffle iron. Mix together bananas, eggs, butter, milk, sugar, salt, and spices. Stir in flour, baking soda and pecans until just blended. Use cooking spray to grease waffle iron. Cook as directed. Top with maple syrup.
