Chew On This


Normally I'm a crunchy cookie gal. But these are just way too good to pass up. Try them and smile!


Chewy White Chocolate Macadamia Cookies

2 sticks melted unsalted butter
1/4 cup sugar
1 1/4 cup brown sugar
1 egg
1 egg yolk
2 Tbsp 1% milk
1 tsp vanilla extract
1 Tbsp almond extract

2 1/4 cup bread flour
1 tsp salt
1 tsp baking soda

1 1/2 cups macadamia nuts, lightly toasted
1 bag white chocolate chips - the best quality you can find - don't use Nestle!

Preheat oven to 375 F.

Cream the melted butter and sugars together. Add the eggs and extracts and beat to mix until well combined.

Sift in dry ingredients, slowly incorporating them into the wet ingredients in small additions. Mix until well combined. Stir in nuts and chips.

Use an ice cream scoop to scoop big mounds of cookie dough onto parchment or silpat lined baking sheets. Press down on each mound to flatten them a bit. Chill 20 minutes. Bake for 15-20 minutes, or until golden. Cool completely on a wire rack.

These are a must-try... mostly because when Mrs. Field's was popular and around more than they are now, I was completely obsessed with their White-Chocolate Macadamia Nut cookies!
